Autumn vibes 🍂

The cool crisp air, the changing leaves, spiced pumpkin candles, rain, cozy socks… for some of us the best time of the year. The cozy one. For others, it is the time of the year where you can feel unmotivated, lazy, or even sad. We think that it is important to find the good even in the darkest times. Because that is the only way to keep yourself sane.

So that's why yogagang prepared a recipe for you to brighten those days and to spice a bit your life at the moment. And that's not all gang. We have a tip for you if you want to travel somewhere where you can enjoy the silence in the woods, clean your heads from work or school and just enjoy your precious time.

Recipe:

First of all, when you think about summer food everybody says salads, fruits, ice cream. I suppose, anything refreshing. But when it comes to autumn, what kind of food do you think of? For us, it is pumpkin, of course! You can see pumpkins everywhere – pumpkin soup, pumpkin latte, and many more variations of pumpkin. But what about Pumpkin Pie? Let's try it together.

You will need:

  • 300g of HOKKAIDO PUMPKIN

  • 200g of APPLES

  • 150g of OATS

  • 100g of RAISINS (optional)

  • One tablespoon of CINNAMON

  • One tablespoon of NUTMEG

  • CLOVES (optional)

  • 380g of COCONUT SUGAR

  • 200g of WHOLEGRAIN FLOUR

  • 5 EGGS

  • BAKING SODA

  • 150g of YOGURT


And for frosting:

  • 240g of COCONUT SUGAR (or any sugar you prefer)

  • 50g of GHI or BUTTER (whatever you prefer)

  • 60g of CREAM CHEESE

  • 10g of lemon juice

  • 50g of pecans (optional)


LET'S BAKE!

Dough

1. preheat your oven for 170°C

2. put pumpkin and apples into the mixer and try to make puree from it

3. put your pumpkin-apple puree into the bowl and add rolled oats, raisins, cinnamon, nutmeg, cloves, sugar, eggs, and yogurt

4. mix it all together

5. add flour, baking soda and mix it all together

6. put your dough into the form you prefer

7. bake for 45 min

8. let it cool down for 15 min and meanwhile make the frosting


Frosting:

1. put sugar into the mixer and try to make „sugar-flour“ out of it or you can use a confectioner’s sugar

2. add butter (or ghi), cream cheese, and lemon juice and mix it all together

3. pour it over the pie and enjoy <3


After your pumpkin-apple pie is done, pack your favorite warm jacket, warm tea, comfy socks, outdoor shoes, maybe dog or kids, or just yourself and headphones or your favorite (yoga?) buddy, sit into your car and write Kryštofovy Hamry into your navigation.

Kryštofovy Hamry is a nice village near Germany and it’s ideal for this weather. There are plenty of tourist trails where you can walk, run, or bike.

And if you forgot your warm tea don’t worry, there is an amazing food truck called Umanutá koza where you can treat yourself. They serve a really good coffee as well. Which is much needed if you love coffee as much as we do.

So take some time off, forget everything that makes you feel stressed and just enjoy yourself in the woods with a really good pumpkin-apple pie.
